CHABLÉ YUCATÁN – Located 27 miles from Merida in the tiny city of Chochola, this property dates from the early to mid-1800s – originating as an industrial sisal factory. The word “sisal” refers to the translation of henequen, an agave plant from which its interior fiber creates different products such as sacks, bags, and ropes. With the advent of synthetic fiber, it necessarily evolved to become a hacienda but was later abandoned. Rediscovered and re-visioned by current ownership, this magnificent estate was reborn five years ago after a sixteen-year transformation from a sprawling hacienda to an immaculately manicured and well-appointed, Mayan-themed jungle-clad resort. There is no carbon shaming here – as CHABLÉ YUCATÁN is diligently accomplishing its green initiative by completing a massive solar panel installation to power resort facilities and support the local community power needs. The resort footprint is now home to abundant gardens, biking paths, a native bee sanctuary, a private cenote, facilities for golf and tennis, a fabulous spa, modern meeting and conference facilities, and quite possibly the world’s oldest and most monstrous tequila collection. In collaboration with the architect Jorge Borja, Mexico City-based interior designer Paulina Moran is responsible for this modern interpretation of traditional hacienda. The restored 19th-century hacienda blends antique tiles, modern art, and vivid colors throughout the property.

The hotel’s 38 luxurious stand-alone pool casitas, Presidential Suite, and Royal Presidential Suite area unique blend of original details from the 19th-century hacienda and modern art, furniture, and vivid colors. 1 Royal Villa: has 3-bedrooms and can accommodate up to 6 guests. Villa includes living and dining area, each bedroom with private bathrooms, oversized bathroom in master room with private bathtub, double shower, outdoor cascade shower, and indoor Jacuzzi. Large L-shaped pool and outdoor Jacuzzi, outdoor terrace and dining space, Spa, gym, and cinema room.
Service is seamless, and housekeeping is excellent (two clothing items are pressed daily per guest at no extra cost) but the real star here is the wellness program that the property is so well known for. There are complimentary fitness classes and various activities(biking, yoga, Bootcamp, Pilates, meditation, wellness golf) offered each day but, The Destination Spa at Chablé is the hotel’s ‘crown jewel’. This innovative Spa is the first to be built around a ‘cenote’ – natural cave formations, which is considered to be sacred by the Mayans. The Spa consists of 12 modern treatment rooms that spread across an ancient cenote and a steam room, a sauna, a salt cabin, and a floatarium. In addition, the facility offers guests warm and cold whirlpools, a water circuit with varying types of shower pressures, a relaxation area, and a pool. In addition to the spa treatments, three sweat lodges are used for temazcal ceremonies carried by visiting shamans.
The renowned Chef Jorge Vallejo designed Chablé’s gastronomic offer, awarded as the Best Chef in Mexico, whose restaurant Quintonil occupies the 11th place in the list “The World’s 50 Best Restaurants” by S. Pellegrino. Under his leadership, Luis Ronzón, Chable’s Executive Chef, offers a unique dining experience in three restaurants:
IXI’IM RESTAURANT: Translated as “corn” in the Mayan language, Ixi’im offers an elegant setting within the lush jungle of the extensive Chablé Yucatan grounds. The refined menu crafted by Jorge Vallejo and Luis Ronzon showcases an innovative mix of Mexican and local influences, combining fresh herbs, fruits, and vegetables harvested from the resort’s traditional Mayan Garden. The restaurant houses the world’s most extensive collection of tequila, innovative cocktails, and a bespoke wine list.
